Cumaccha is a community lot produced by 14 smallholder farmers in Ayabaca, a mountainous province in northern Peru near the Ecuadorian border.
For many years, coffee from this remote region received little recognition and was often sold without its Peruvian identity. Today, greater attention to selective harvesting, controlled fermentation and careful drying is helping Ayabaca’s distinctive coffees earn the recognition they deserve.
Grown between 2,000 and 2,400 metres, this blend of Typica, Caturra and Catimor represents the shared knowledge and dedication of the community.

Process: ANOXIC NATURALCoffee cherries are fermented straight after picking and sorting in sealed tanks or GrainPro bags, creating an oxygen-free environment that encourages a clean, fruit-forward character.
Following fermentation, the cherries are spread in thin layers inside drying sheds. They are turned frequently and protected from rain and humidity to ensure slow, even drying and preserve the coffee’s natural sweetness. The result is a rich, comforting cup with notes of blueberry muffin, raisins and dark chocolate.
We freshly roast our coffees and dispatch them on the same day. Our current roast day is Tuesday, please order the latest by 10am on Tuesday for Wednesday delivery.
