We first met the incredible team from Los Nogales at a cupping in London a few years back - and from the first sip, we were hooked. Their experimental microlots stood out with bold and very unique flavour notes that we couldn’t stop thinking about. We placed our first order right then and there.
This year, the Nogales team are focusing on three key pillars: terroir, genetics, and science - all working together like a well-balanced ecosystem. They don’t see coffee as just about soil, or just about varietals, or fermentation - it’s the relationship between all of it that matters. In true nerdy fashion, they even created their own flavour wheel based on compounds found during fermentation, using alcohol analysis to see what’s really happening inside the beans. It’s a super thoughtful, science-driven approach that keeps Nogales at the cutting edge of coffee farming.
