Process: Ozone-disinfected cherries undergo a 36-hour anaerobic, water-submerged fermentation to build a clean yet complex base. After pulping and demucilaging, the mucilage and pulp are lab-processed to create a bespoke culture medium rich in aroma and flavour precursors, which is reintroduced for a 20-hour pressurised fermentation to bind those compounds to the beans. A final Thermal Shock wash locks everything in, sealing the coffee for a precise and stable drying phase.
