During Sebastian's European trip, we had the pleasure of hosting him at our roastery. Together with clients and friends, we conducted coffee cupping sessions featuring his exceptional coffees. Sebastian, a humble farmer with a wealth of knowledge, is always willing to share his insights. We are excited to establish a longer-term collaboration with Sebastian, ensuring his coffees are a part of our offerings to continually support his projects.

Process: Honey, and injected with CO2 and left to ferment for 100 hours. The cherries are then pulped, leaving their mucilage on them and placed in fermentation tanks where they go through a second carbonic maceration for 100 hours. Mostois added to this second fermentation as well as lemongrass leaves and hops. After fermentation, the coffee is laid to dry inside ‘Eldas’ and a second drying stage happens on African beds inside polytunnels.
